Green environmental vacations are hard to find, but try to do it. I remember when I volunteered to work on a kibbutz farm in Israel. It was real green living, but there were space constraints. Couple ended up taking blankets and doing their thing at night in the fields.
A new alternative on this is to volunteer to work on an organic farm. It may be what you are looking for, and there are organic farms in these programs in the United States. Check out a great organic farm in Church View, West Virginia. You can volunteer there for a minimum 3-week stay, which is enough to get some out-in-the-fields action, if it's not too cold by then.
